  • 1 teaspoon Cinnamon Freshly ground recommended
  • 1/4 teaspoon Nutmeg
  • 3/4 cup Brown Sugar Packed
  • 3-4 medium Mashed Bananas Ripe
  • 1/4 cup Molasses
  • 1/4 cup Olive Oil Can substitute with melted butter or canola oil
  • 1/2 teaspoon Salt

Optional Toppings

  • 1 package Cream Cheese For spreading
  • 1/2 cup Chopped Nuts Walnuts or pecans
  • 1/2 cup Chocolate Chips

Preparation

  • Preheat your oven to 350°F (175°C). Prepare a loaf pan by lining it with parchment paper or giving it a light greasing.
  • Whisk together flour, baking powder, baking soda, ground ginger, cinnamon, allspice, nutmeg, and salt in a small bowl.
  • Mash the overripe bananas in a large bowl until smooth. Add olive oil, molasses, vanilla extract, and brown sugar, whisking until combined.
  • Fold the dry mixture into the wet ingredients gently until no flour streaks remain.
  • Pour the batter into the prepared loaf pan, smoothing the top.
  • Bake for 55 to 65 minutes, testing for doneness with a toothpick.
  • Cool the loaf in the pan for 10-15 minutes, then transfer to a wire rack to cool completely before slicing.

Optional Toppings

  • Top slices with cream cheese or sprinkle with chopped nuts if desired.
