How to Make 10-Minute Mushroom Spinach Scrambled Eggs

  • In a skillet, melt butter or heat olive oil over medium heat. Add sliced mushrooms and cook for 3-4 minutes, until tender and slightly golden. Then, stir in fresh spinach and cook until wilted, about 2 minutes.
  • In a bowl, crack the fresh eggs and whisk them until well combined. Add salt and pepper to taste.
  • Pour the whisked eggs over the sautéed mushrooms and spinach in the skillet. Stir gently with a spatula to combine, cooking for 2-3 minutes until the eggs are softly set but still creamy.
