Ingredients
  

For the Casserole

  • 2 tablespoons Canola Oil Olive oil can be used for flavor.
  • 3 cloves Garlic Finely chopped; garlic powder can be used.
  • 1 piece Jalapeño Seeded and finely chopped; substitute with bell pepper for milder taste.
  • 1 large Onion Diced; yellow or white onion works well.
  • 3 cups Shredded Cooked Chicken Use rotisserie chicken for easier prep.
  • 2 cans Diced Green Chiles Each can is 4 ounces; substitute with diced tomatoes for less spiciness.
  • 1/2 teaspoon Paprika Smoked paprika adds a delightful flavor.
  • Kosher Salt Season to taste.
  • Black Pepper Season to taste.
  • 3 cans Green Enchilada Sauce Each can is 10 ounces; homemade can be used.
  • 2/3 cup Sour Cream Greek yogurt is a non-dairy alternative.
  • 18 pieces Corn Tortillas Cut in half; flour tortillas can be used.
  • 3 cups Grated Monterey Jack Cheese About 12 ounces; cheddar can be used for sharper flavor.
  • Fresh Cilantro Optional garnish for color and freshness.

Directions

  • Preheat your oven to 350°F (175°C) to prepare for baking.
  • In a large skillet, heat canola oil over medium heat. Add garlic, jalapeño, and onion, sautéing until soft and fragrant for about 5-7 minutes.
  • Combine shredded chicken, diced green chiles, paprika, salt, and pepper in the skillet, mixing evenly before removing from heat.
  • Pour about a cup of green enchilada sauce over the bottom of a large casserole dish.
  • Layer half of the cut corn tortillas over the sauce, followed by half of the chicken mixture and a sprinkle of Monterey Jack cheese.
  • Repeat the layering process with the remaining tortillas, chicken mixture, and cheese on top.
  • Pour the remaining enchilada sauce over the top and bake in the preheated oven for 35-40 minutes until bubbly and golden.
  • Let cool for 5 minutes, garnish with chopped cilantro, and serve with favorite toppings.
