Ingredients
  

For the Salad

  • 1 pound Ground Beef opt for 85/15 or 90/10 for the best balance
  • 2 tablespoons Taco Seasoning use homemade for a healthier twist
  • 8 ounces Rotini cook until al dente
  • 1 cup Green Pepper diced
  • 1 medium Yellow Onion finely chopped
  • 1 cup Grape Tomatoes halved
  • 1 cup Cheddar Jack Cheese shredded
  • 2 cups Iceberg Lettuce chopped
  • 1/2 cup Black Olives sliced

For the Dressing

  • 1 cup French Dressing e.g., Wish-Bone

For the Crunch

  • 2 cups Doritos crushed

Directions

  • Dice the green pepper, chop the onion finely, halve the grape tomatoes, and slice the olives thinly.
  • Boil salted water in a pot, and cook the rotini until al dente, about 8-10 minutes. Drain well and set aside.
  • In a skillet over medium-high heat, brown the ground beef, then add the taco seasoning and let it simmer for about 2 minutes.
  • In a large mixing bowl, combine the cooked rotini, seasoned beef, prepared vegetables, and shredded Cheddar Jack cheese. Toss gently.
  • Pour the French dressing over the mixture and toss again until everything is coated.
  • Just before serving, crush the Doritos and gently stir them into the salad.

Notes

Prep vegetables ahead to speed up assembly and store leftovers in an airtight container for up to 3 days.
