For the Strawberry Mixture

  • 5 pieces fresh strawberries hulled and finely chopped
  • 1 teaspoon cane sugar adjust to taste

For the Matcha

  • 0.5 to 1 teaspoon matcha powder ceremonial grade for best results
  • 0.25 cup cold water

For the Latte

  • Ice use as needed
  • 0.5 to 1 cup almond milk or your favorite milk
  • Maple syrup or honey optional, to sweeten

  • Combine the strawberries and sugar in a small bowl. Use a fork to mash them gently as you mix; let the sweetness of the sugar infuse the strawberries. Set this flavorful mixture aside to allow the juices to meld, about 5 minutes.
  • Sift the matcha powder into another small bowl to eliminate any lumps. Add the cold water and use a matcha whisk to vigorously whisk from side to side, creating a beautiful, foamy layer on top.
  • Layer the strawberries into the bottom of a tall glass. Fill the glass halfway with ice, then pour in the almond milk until it's about two-thirds full, allowing room for that frothy matcha on top.
  • Top your glass with the whisked matcha mixture, letting it cascade over the almond milk. Stir gently to combine the layers just before sipping; taste and adjust sweetness with maple syrup or honey as desired.
  • Optional: For an extra touch, garnish with a strawberry slice on the rim of the glass.

Notes

Serve immediately after preparation for the best flavor and texture. Store leftovers in an airtight container for up to 2 days.
