How to Make Watermelon Popsicles

  • Remove the watermelon flesh from its rind, carefully cubing it while discarding any seeds and the green base.
  • Add the cubed watermelon to a mixer jar, ensuring it’s packed nicely.
  • Combine 2 tablespoons of sugar and the juice from ½ lemon into the mixer jar with the watermelon.
  • Blend the mixture until it transforms into a smooth, fine puree.
  • Pour the watermelon mixture into your favorite popsicle molds, filling them up to the brim.
  • Seal the molds with foil, making sure to slit open the top with a knife to allow for the ice cream sticks.
  • Freeze those popsicles for a minimum of 8 hours, or let them chill overnight.
  • Remove the molds the next day by peeling off the foil.
  • Gently pull the popsicles from the mold. If they stick, a little twist can help release them.
