Preparation Steps

  • Line a rimmed baking sheet with parchment or wax paper.
  • Spread the cubed watermelon evenly on the baking sheet and freeze until solid, about 3 hours.
  • Place the frozen watermelon cubes, liquid sweetener, lime juice, and kosher salt into a food processor and blend until smooth.
  • Scrape down the sides, then continue processing for an additional 4 to 6 minutes until creamy and combined.
  • Enjoy immediately or transfer to an airtight container, press parchment on the surface, and freeze until solid, about 2 to 3 hours.

Notes

Optional to top with a sprinkle of lime zest for extra flavor.
