How to Make Strawberry Banana Bread

  • Preheat your oven to 375°F (190°C) and spread chopped strawberries on a baking sheet. Roast them for about 15-20 minutes, until softened and their juices are bubbling.
  • In a large bowl, whisk together all-purpose flour, whole wheat pastry flour, baking soda, and salt.
  • In another bowl, mash ripe bananas with a fork, then mix in Greek yogurt, honey, coconut oil, vanilla extract, and eggs. Blend until smooth.
  • Pour the wet ingredients into the dry ingredients, and gently fold until just combined.
  • Pour the batter into a greased loaf pan. Bake it in the preheated oven for about 60 minutes, or until a toothpick comes out clean.
  • After baking, allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack.
