Ingredients
- 2 medium sweet potatoes
peeled and diced
- 1 tbsp olive oil
- ½ tsp garlic powder
- ½ tsp smoked paprika
optional
- ¼ tsp salt
- Black pepper to taste
- Optional: chopped parsley
Instructions
Preheat oven to 425°F. Line a baking sheet with parchment paper.
Toss sweet potatoes with oil and seasonings in a bowl.
Spread on baking sheet without crowding.
Roast 25–30 minutes, flipping halfway.
Garnish with herbs and serve warm.
Notes
Cut sweet potatoes evenly for best results. For sweeter variation, add cinnamon or a touch of maple syrup.
