Ingredients
  

  • - 2 medium sweet potatoes peeled and diced
  • - 1 tbsp olive oil
  • - ½ tsp garlic powder
  • - ½ tsp smoked paprika optional
  • - ¼ tsp salt
  • - Black pepper to taste
  • - Optional: chopped parsley

Instructions
 

  • Preheat oven to 425°F. Line a baking sheet with parchment paper.
  • Toss sweet potatoes with oil and seasonings in a bowl.
  • Spread on baking sheet without crowding.
  • Roast 25–30 minutes, flipping halfway.
  • Garnish with herbs and serve warm.

Notes

Cut sweet potatoes evenly for best results. For sweeter variation, add cinnamon or a touch of maple syrup.
