Ingredients
  

  • - 12 oz spicy Italian sausage
  • - 1 tbsp olive oil
  • - 1 tbsp Italian seasoning
  • - 1 tsp smoked paprika
  • - 1 large sweet potato peeled & cubed
  • - 5 garlic cloves minced
  • - ¼ tsp red pepper flakes
  • - 1 tbsp tomato paste
  • - 6 cups water or chicken broth
  • - 8 oz refrigerated cheese tortellini
  • - 4 oz fresh spinach
  • - ½ cup heavy cream
  • - 4 tbsp fresh thyme
  • - Salt to taste

Instructions
 

  • Brown sausage in olive oil in a large pot. Add seasoning and paprika.
  • Add sweet potato, garlic, red pepper, and tomato paste. Stir well.
  • Pour in water or broth. Bring to a boil, then simmer 15 minutes.
  • Add tortellini and cook 10 minutes or per package instructions.
  • Stir in spinach until wilted. Remove from heat and add cream.
  • Season to taste. Garnish with thyme. Serve hot.

Notes

- Add cream off-heat to prevent curdling
- Use baby spinach for best texture
- Reheat gently to maintain creaminess
