  • 1 lb Chicken Breast skinless for a leaner option

  • 3-4 tbsp Lemon Juice freshly squeezed is best
  • 1 tbsp White Wine Vinegar for marinade
  • 2 tbsp White Wine Vinegar for salad
  • 2 tsp Garlic Powder or fresh minced garlic
  • 3-4 tbsp Dried Oregano or fresh oregano
  • 1 tsp Kosher Salt adjust based on dietary preferences
  • 1/2 tsp Black Pepper or lemon pepper for extra flavor

For the Salad

  • 2 cups Cucumber chopped, English or baby cucumbers preferred
  • 4 Roma Tomatoes or cherry tomatoes
  • 23 Kalamata Olives or black olives
  • 1/4 small Red Onion diced, green onions for milder taste
  • 1/2 cup Feta Cheese crumbled, goat cheese is a great alternative

For the Base

  • 2 cups White Rice cooked, or brown rice/quinoa for a healthier option

Preparation Steps

  • Marinate Chicken: In a large ziplock bag, combine chicken with olive oil, lemon juice, white wine vinegar, garlic powder, oregano, salt, and black pepper. Seal and massage gently; refrigerate for 30 minutes or up to 8 hours for intense flavor.
  • Cook Chicken: Heat 1 teaspoon of olive oil in a skillet over medium heat. Cook the marinated chicken for about 4-5 minutes per side until it reaches a golden brown color and an internal temperature of 165°F. Once cooked, let it rest for 8-10 minutes before slicing.
  • Prepare Cucumber Salad: In a bowl, combine the chopped cucumbers, diced tomatoes, olives, red onion, crumbled feta, olive oil, white wine vinegar, oregano, garlic powder, and a sprinkle of salt and pepper. Toss everything well to marry the flavors.
  • Assemble Bowls: To build your Greek Chicken Bowls, layer 1/2 cup of cooked white rice, followed by 3/4 cup of refreshing cucumber salad, and top each bowl with 4 oz of sliced marinated chicken.
