Ingredients
  

For the Lobster

  • 2 pieces lobster tails 5 to 6 oz each
  • 1 teaspoon fine sea salt adjust to taste
  • 1 teaspoon freshly cracked black pepper or use white pepper

For the Marinade

  • 1 tablespoon fresh parsley chopped; can substitute with chives or dill
  • 2 cloves garlic minced; fresh is best
  • 1 tablespoon Dijon mustard yellow mustard works too
  • 2 tablespoons olive oil melted butter can be used
  • 1 tablespoon fresh lemon juice lime juice can be used if needed

For the Dipping Sauce

  • 2 tablespoons unsalted butter for richness

Preparation

  • Prepare Lobster Tails: Cut the shell down the center, cracking the ribs with kitchen shears. Butterfly the lobster by lifting the meat above the shell.
  • Set Oven: Preheat your oven to broil on high and place the rack in the upper third.
  • Make Marinade: In a bowl, combine parsley, garlic, Dijon mustard, sea salt, black pepper, olive oil, and lemon juice. Stir until well mixed.
  • Arrange Tails: Place the butterflied lobster tails in a roasting pan. Coat them with the marinade and dot with unsalted butter.
  • Broil: Broil the lobster tails for 10-11 minutes until the meat is opaque and reaches 145˚F.
  • Prepare Dipping Sauce: In the same pan, combine drippings with remaining unsalted butter and let it simmer briefly.

Notes

Optional: Sprinkle fresh parsley on top before serving for added color and flavor.
