How to Make Classic Cottage Cheese Breakfast Burrito

  • Preheat the oven to 400°F.
  • Dice the Yukon Gold potatoes, bell peppers, and onion into bite-sized pieces.
  • Toss the diced vegetables in a large bowl with olive oil, Italian seasoning, salt, cayenne pepper, and garlic powder.
  • Roast the seasoned vegetables in the oven for 15 minutes, until softened.
  • Add sliced chicken sausage to the roasting vegetables and bake for another 15 minutes.
  • Blend the cottage cheese and eggs until smooth.
  • Pour the mixture over the hot vegetable and sausage blend.
  • Sprinkle the shredded cheddar cheese on top and return to the oven for 10-15 minutes.
  • Cool for 10 minutes before cutting into portions.
  • Warm the tortillas, fill them with the mixture, and roll tightly.
