Ingredients
  

Filling

  • 2 cups chopped spinach leaves
  • 1/2 cup pitted chopped Greek olives
  • 1 medium finely diced red onion
  • 1 cup diced sweet grape tomatoes
  • 1 cup shredded feta cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon minced Greek oregano

For Cooking

  • 2 tablespoons canola oil or butter
  • 4 large flour tortillas
  • 1 tablespoon Greek olive oil optional

Instructions
 

Preparation

  • In a large bowl, combine the chopped spinach, olives, red onion, tomatoes, feta, mozzarella, and oregano. Toss everything together until well-blended.
  • Preheat your grill or frying pan over medium heat, lightly seasoning it with cooking oil.
  • Lay out the tortillas flat and distribute the filling evenly.
  • Add Greek olive oil over the filling if using, fold the tortillas, and cook until golden brown.

Serving

  • Once cooked, serve with your favorite dips or condiments.

Notes

For a refreshing touch, serve with a side of tzatziki.
