Ingredients
  

For the Base

  • 2 tbsp Olive Oil Consider substituting with avocado oil
  • 1/2 cup Onion, diced White or yellow onions preferred
  • 3 cloves Garlic, minced Can substitute with garlic powder (1 tsp)
  • 1/2 tsp Italian Seasoning Swap for dried oregano and basil if desired

For the Veggies

  • 2 stalks Celery, chopped Substitute with bell pepper for sweetness
  • 1 cup Red Bell Pepper, diced Any variety of bell pepper works
  • 2 medium Carrots, sliced Peas or corn can be substitutes
  • 2 cups Spinach Kale can be used for a heartier texture

For the Protein

  • 1 lb Lean Ground Turkey Can swap with ground chicken or beef
  • 1 can White Beans, rinsed and drained Chickpeas can be an alternative

For the Broth and Pasta

  • 5 cups Chicken Broth Vegetable broth is a great vegetarian option
  • 1 cup Water Adjust for desired thickness
  • 1.5 cups Fusilli Pasta Gluten-free pasta or quinoa works well

For the Finishing Touches

  • 1 tbsp Lemon Juice Lime juice can be a zesty twist
  • Salt & Pepper Adjust according to taste

Cooking Steps

  • Prep Ingredients: Chop the celery, onion, garlic, bell pepper, and carrots into bite-sized pieces. Rinse the white beans.
  • Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add celery and onion, cooking until translucent (4-5 minutes).
  • Add Garlic & Seasoning: Stir in minces garlic and Italian seasoning, sautéing for 30 seconds.
  • Cook Turkey: Add ground turkey, breaking it apart. Cook for about 4-5 minutes until browned.
  • Combine Ingredients: Toss in white beans, carrots, chicken broth, and water. Bring to a boil, cover and simmer for 10 minutes.
  • Add Pasta: Stir in fusilli pasta, return to a boil and cook for 10 minutes until pasta is tender.
  • Finish Soup: Mix in lemon juice, bell pepper, and spinach. Cook for 2 minutes until spinach wilts.
  • Season & Serve: Adjust seasoning with salt and pepper. Serve hot.

Notes

Optional: Garnish with fresh herbs or Parmesan cheese. For best texture, store soup and pasta separately.
