Step-by-Step

  • Season both sides of the chicken breasts generously with kosher salt and black pepper. Then, place the flour in a shallow bowl, lightly dredging each chicken piece through it and shaking off any excess for an even coating.
  • Heat 2 Tablespoons of the unsalted butter and 2 Tablespoons of olive oil in a large skillet over medium-high heat. Once the butter has melted, add the chicken and sauté for 2-4 minutes per side, until the chicken is golden brown and cooked through. Remove the chicken to a plate, cover with foil, and set aside.
  • Brown the remaining 4 Tablespoons of butter in the same skillet. When the butter melts, toss in the fresh sage leaves. Allow the butter to brown and bubble for about 2-3 minutes until it gives off a delicious, nutty aroma. Remove the sage and set it on a paper towel-lined plate while keeping the browned butter in the skillet.
  • Combine the lemon juice and white wine (or chicken broth) into the skillet. Let the mixture simmer for 2-3 minutes, scraping up any browned bits from the pan for extra flavor. Taste the sauce and adjust seasoning with more salt and pepper to your liking.
