Ingredients
  

For the Chicken

  • 1 pound Chicken Breast Boneless and skinless
  • 1 tablespoon Olive Oil Extra virgin preferred
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Dried Basil

For the Rice

  • 1 cup Rice Cook in chicken broth for extra flavor

For the Salad

  • 1 cup Cucumber Diced uniformly
  • 1 cup Tomatoes Fresh or canned
  • 1/4 cup Red Onion Soaked in ice water
  • 1/2 cup Castelvetrano Olives Can use other olives
  • 1/2 cup Feta Cheese Crumbled

For the Dressing

  • 1/4 cup Olive Oil Base for dressing
  • 2 tablespoons Red Wine Vinegar Can substitute with lemon juice
  • 1 tablespoon Apple Cider Vinegar
  • 2 tablespoons Mayonnaise Greek yogurt is a lighter alternative
  • 1 teaspoon Dijon Mustard
  • 1 tablespoon Lemon Juice Freshly squeezed
  • 1 teaspoon Honey Agave works as a substitute
  • 1 teaspoon Garlic Powder Adjust if using fresh garlic
  • to taste Salt
  • to taste Pepper

Instructions
 

Method

  • Cook the rice according to package instructions, about 15-20 minutes, using chicken broth for flavor.
  • While the rice is cooking, dice the cucumber and tomatoes. Mince the red onion and soak in ice water for 10 minutes.
  • Combine soaked red onion, cucumber, tomatoes, olives, and feta in a mixing bowl. Drizzle with olive oil and vinegar, sprinkle with salt, and toss to mix.
  • In a jar, combine olive oil, apple cider vinegar, mayonnaise, Dijon mustard, lemon juice, honey, oregano, basil, garlic powder, salt, and pepper. Shake until well mixed.
  • Pat the chicken dry, cut into chunks, season, and cook in a skillet over medium-high heat until it reaches 165°F, about 6-8 minutes.
  • Let the chicken rest for 5 minutes before slicing to retain juices.
  • Fluff the rice, divide into bowls, and top with sliced chicken, Mediterranean salad, and homemade dressing. Garnish with fresh mint.

Notes

Consider serving with warm pita bread or tzatziki for added flavor.
