Instructions
 

Preparation

  • Chop the medium yellow onion, large carrots, celery ribs, and baby potatoes into bite-sized pieces, and place them at the bottom of your slow cooker.
  • Lay the corned beef brisket on top of the vegetables. Season generously with kosher salt, freshly ground black pepper, and sprinkle on the store-bought pickling spice.
  • Add the thyme sprigs and bay leaves for extra flavor.
  • Pour in enough water to almost cover the meat.
  • Set your slow cooker to low and cook for 7-8 hours, or to high for 4.5 hours.
  • Once the meat is tender, carefully add the chopped green cabbage on top.
  • Cook on high for an additional 45 minutes to 1 hour until the cabbage is tender.
  • Slice the corned beef against the grain and serve warm.

Notes

For a touch of color and added flavor, garnish with fresh parsley. Store leftovers in an airtight container for up to 5 days.
