Ingredients
  

For the Brisket

  • 1 piece Corned Beef Brisket Flat or point cut based on taste preference.

For the Spice Mix

  • 2 tablespoons Coriander Seeds Can swap with pickling spice.
  • 1 tablespoon Whole Allspice Berries Use half if using ground allspice.
  • 4 whole Whole Cloves Avoid ground cloves.
  • 1/4 cup Packed Light Brown Sugar May substitute with white sugar or maple syrup.
  • 1 teaspoon Freshly Ground Black Pepper

For Roasting

  • 6 cups Water Consider using stout or beer.

Preparation

  • Preheat your oven to 325°F (163°C).
  • Trim any excess fat from the corned beef brisket and rinse it under cold water.
  • In a bowl, crush the coriander seeds, allspice berries, and whole cloves. Mix with the packed light brown sugar and freshly ground black pepper.
  • Spread the spice mixture evenly over the brisket.
  • Place the brisket fat side up in a roasting pan with 6 cups of water, cover tightly with foil and roast for 2 hours.
  • Remove the foil and roast for an additional hour, or until the brisket is tender.
  • Let the brisket rest for 15 minutes before slicing against the grain.

Notes

Serve with mustard or horseradish for added flavor. Leftovers can be used in sandwiches or soups.
