Ingredients
  

For the Potatoes

  • 1.5 pounds Baby Potatoes washed and cut into halves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper freshly cracked

For the Seasoning

  • 2 teaspoons Garlic powder
  • 1 teaspoon Paprika
  • 1 teaspoon Parsley (dry)
  • 2 teaspoons Italian Seasoning
  • 2 teaspoons Chili flakes optional

For the Coating

  • 0.25 cup Butter (unsalted) melted
  • 1 tablespoon Corn starch
  • 3 tablespoons Parmesan cheese shredded or grated

Directions

  • Preheat the oven at 400°F.
  • Parboil the baby potatoes by cutting them in halves and boiling them for 10 minutes.
  • Drain the water and transfer the potatoes into a bowl. Add in the cornstarch and half of the melted butter, then mix well until evenly coated.
  • Mix all remaining ingredients in a baking pan, spreading the mixture evenly in the pan.
  • Arrange the parboiled potatoes in the pan, cut side down.
  • Bake in the preheated oven for about 30 minutes.
  • Cool slightly after removing from the oven for about 3 minutes.

Notes

Optional: Garnish with fresh parsley for an extra touch of flavor and color.
