Ingredients
  

For the Herb Oil

  • 1/2 cup extra-virgin olive oil
  • 4 cloves garlic (minced)
  • 2 tablespoons rosemary (minced)
  • 1 tablespoon thyme (minced)

For the Lamb

  • 6 lb leg of lamb bring to room temperature
  • 2 tablespoons kosher salt
  • 1 teaspoon freshly ground black pepper

For the Roasting

  • 2 heads garlic (cloves peeled)
  • 1 cup cipollini onions
  • 2 whole lemons (halved)
  • 1/4 cup water

Instructions
 

Prepare Herb Oil

  • In a mixing bowl, combine extra-virgin olive oil, minced garlic, minced rosemary, and thyme. Whisk until well blended, and brush over the leg of lamb. Season with kosher salt and freshly ground black pepper to taste.

Initial Roasting

  • Preheat your oven to 400°F (200°C). Place the seasoned leg of lamb on a roasting rack and roast for 30 minutes.

Mix Roasting Ingredients

  • In a separate bowl, toss whole garlic cloves, cipollini onions, halved lemons, olive oil, salt, and pepper together. Scatter this mixture around the lamb in the roasting dish.

Continue Roasting

  • Lower the oven temperature to 350°F (175°C) after the initial roasting. Brush the lamb again with the remaining herb oil and add 1/4 cup of water to the roasting dish.

Cook to Perfection

  • Roast the lamb for an additional 1 to 1.5 hours, or until a meat thermometer reads 145°F to 150°F (63°C to 65°C).

Rest Before Carving

  • After removing the lamb from the oven, let it rest for at least 15 minutes before carving.

Notes

Serve with a fresh mint sauce for an extra layer of flavor.
