Ingredients
  

For the Rolls

  • 1 cup vermicelli rice noodles cooked until tender
  • 12 pieces large cooked shrimp sliced crosswise
  • 8 pieces spring roll wrappers
  • 1 cup shredded carrots
  • 8 leaves butter lettuce leaves
  • 1 cup Persian cucumbers cut into matchsticks
  • 1 cup fresh herbs cilantro, mint, basil mixed

For the Peanut Sauce

  • 2 tbsp brown sugar
  • 2 tbsp hot water
  • 1/2 cup unsweetened creamy peanut butter
  • 2 tbsp soy sauce or tamari
  • 1 tbsp seasoned rice vinegar
  • 1 tbsp toasted sesame oil
  • 1 tbsp chili garlic sauce sambal oelek
  • 1 tsp ground ginger

For the Sweet Chili Sauce

  • 1/2 cup granulated sugar
  • 2 tbsp hot water
  • 1 clove grated garlic optional
  • 1 tbsp fish sauce
  • 2 tbsp fresh lime juice
  • 1 tbsp chili garlic sauce sambal oelek
  • 1 tbsp toasted sesame oil

Step-by-step

  • Boil Water: Bring a large pot of water to a rolling boil over high heat. Add the vermicelli rice noodles and cook according to the package instructions until tender, about 4-5 minutes. Drain and rinse with cool water to stop the cooking process.
  • Slice Shrimp: Carefully slice each cooked shrimp crosswise, resembling butterfly shapes.
  • Soften Wrappers: Fill a shallow bowl with warm water. Dip one spring roll wrapper into the water for 8-10 seconds.
  • Add Fillings: At the edge of the softened wrapper closest to you, place half a butter lettuce leaf. Top with noodles, shredded carrots, cucumber, fresh herbs, and shrimp halves.
  • Roll It Up: Starting from the edge closest to you, tightly roll the wrapper away from your body.
  • Make Peanut Sauce: Mix together brown sugar and hot water until dissolved. Whisk in peanut butter, soy sauce, rice vinegar, sesame oil, chili garlic sauce, and ginger until smooth.
  • Prepare Sweet Chili Sauce: Combine sugar and hot water until dissolved. Mix in grated garlic, fish sauce, lime juice, chili garlic sauce, and sesame oil.
  • Serve: Plate your fresh spring rolls with the peanut and sweet chili sauces alongside.
