For the Salmon and Vegetables

  • 1 pound baby potatoes Substitute with sweet potatoes for sweetness

  • 1 teaspoon garlic powder Fresh garlic can provide stronger flavor

  • 1 bunch fresh asparagus Substitute with green beans or broccoli
  • 1 cup cherry tomatoes Regular tomatoes can be used if halved
  • 4 filets salmon Choose thick cuts for optimal cooking
  • 1 whole fresh lemon Lemon juice can substitute if fresh is unavailable
  • 3 tablespoons melted butter Use vegan butter for a dairy-free option
  • 2 cloves minced garlic Use garlic powder in a pinch

Preparation Steps

  • Preheat the oven to 425°F (220°C).
  • Toss baby potatoes in a mixing bowl with olive oil, Italian seasoning, garlic powder, salt, and pepper. Arrange them cut-side down on a large sheet pan and roast for 20 minutes.
  • Combine melted butter, minced garlic, Italian seasoning, and smoked paprika in a small bowl to create your seasoned garlic butter.
  • Remove the sheet pan from the oven after 20 minutes. Push the potatoes to one side, then arrange your salmon, fresh asparagus, and cherry tomatoes on the same pan.
  • Brush the salmon and vegetables generously with the garlic butter mixture and season the salmon to taste. Add lemon slices on top of the salmon.
  • Roast everything together for an additional 10-12 minutes, or until the salmon is cooked through and flakes easily.

Notes

Optional: Garnish with fresh parsley for additional color and flavor.
