Ingredients
- 1.5 cups white sugar
- 1.5 cups packed light brown sugar
- ¾ cup water
- 2 large egg whites

- 1 tsp vanilla extract
- Optional: pinch of sea salt
Instructions
In a saucepan, combine sugars and water. Stir until dissolved.
Bring to boil without stirring. Cook to 255–260°F (hard-ball stage).
While boiling, beat egg whites to stiff peaks. Add vanilla.
Slowly stream hot syrup into egg whites while mixing on medium-high.
Beat until thick, matte, and holds its shape (5–10 mins).
Drop spoonfuls onto wax paper. Let cool and set fully.
Notes
Avoid humidity and make sure all tools are grease-free for best results.
