Ingredients
  

  • - 1.5 cups white sugar
  • - 1.5 cups packed light brown sugar
  • - ¾ cup water
  • - 2 large egg whites room temp
  • - 1 tsp vanilla extract
  • - Optional: pinch of sea salt

Instructions
 

  • In a saucepan, combine sugars and water. Stir until dissolved.
  • Bring to boil without stirring. Cook to 255–260°F (hard-ball stage).
  • While boiling, beat egg whites to stiff peaks. Add vanilla.
  • Slowly stream hot syrup into egg whites while mixing on medium-high.
  • Beat until thick, matte, and holds its shape (5–10 mins).
  • Drop spoonfuls onto wax paper. Let cool and set fully.

Notes

Avoid humidity and make sure all tools are grease-free for best results.
