Ingredients
  

  • - 1 tbsp olive oil
  • - 1 tbsp butter
  • - 1 small onion diced
  • - 4 garlic cloves minced
  • - ½ tsp thyme
  • - 1 tsp Italian seasoning
  • - ¼ tsp red pepper flakes
  • - ½ tsp salt ¼ tsp pepper
  • - 3–4 cups shredded chicken
  • - ½ cup sun-dried tomatoes chopped
  • - 4 cups chicken broth
  • - 1 cup heavy cream
  • - 16 oz gnocchi
  • - 2 cups kale or spinach
  • - ½ cup grated parmesan
  • - Juice of ½ lemon

Instructions
 

  • Sauté onion in oil & butter. Add garlic, herbs, and spices.
  • Stir in chicken & sun-dried tomatoes.
  • Add broth, bring to simmer.
  • Stir in gnocchi; cook 3–4 mins.
  • Add cream & parmesan. Simmer.
  • Stir in greens. Add lemon juice.
  • Serve hot with extra cheese.

Notes

- Use fresh or shelf-stable gnocchi
- Add broth to thin leftovers
- Coconut cream + vegan parm = dairy-free version
