Equipment

  • - Dutch oven or large pot
  • Wooden spoon or spatula
  • Ladle

Ingredients
  

  • - 1½ lbs chicken breasts or thighs
  • - 2 tbsp olive oil
  • - ½ yellow onion diced
  • - 4 garlic cloves minced
  • - 1 tsp Italian seasoning
  • - ½ tsp red pepper flakes
  • - ½ tsp salt
  • - ¼ tsp pepper
  • - ½ cup sun-dried tomatoes chopped
  • - 4 cups chicken broth
  • - 1½ cups heavy cream
  • - ¾ cup parmesan cheese
  • - 2 cups baby spinach

Instructions
 

  • Heat oil in pot; sear chicken 3–4 mins per side. Remove.
  • Sauté onion, garlic, herbs, and spices.
  • Add broth and sun-dried tomatoes. Simmer. Return chicken.
  • Shred chicken and stir in cream, cheese, and spinach.
  • Simmer until creamy. Taste and serve.

- Dairy-free? Use coconut milk + vegan cheese
