Recipe Steps

  • Prepare Verde Sauce: Roast poblano chiles over high heat until charred, steam them, then peel. Roast tomatillos and garlic until softened. Blend everything with jalapeño, cilantro, lime juice, sugar, and salt until smooth.
  • Sear Turkey: Cut turkey thighs into 1-inch chunks, season, and sear in olive oil until browned.
  • Cook Aromatics: Sauté yellow onions in the same pot until translucent; add minced garlic and cumin.
  • Combine & Simmer: Add seared turkey back, verde sauce, and chicken stock. Stir in chipotle, oregano, bay leaves, cloves, salt, and pepper. Simmer uncovered for 3-4 hours.
