Ingredients
  

  • - 6 cups peeled and diced potatoes
  • - 1 small onion chopped
  • - 3 cloves garlic minced
  • - 1 bell pepper chopped
  • - 2 celery stalks diced
  • - 1 tsp smoked paprika
  • - 1 tsp Cajun seasoning
  • - ½ tsp dried thyme
  • - Salt and pepper to taste
  • - ¼ tsp cayenne pepper optional
  • - 4 cups chicken or vegetable broth
  • - 1 cup heavy cream or half-and-half
  • - 1 tbsp butter
  • - ½ cup shredded cheddar cheese optional
  • - ¼ cup chopped green onions

Instructions
 

  • Add potatoes, onion, garlic, bell pepper, celery, and spices to slow cooker.
  • Pour in broth and stir.
  • Cook on low 6–7 hours or high 3–4 hours, until potatoes are soft.
  • Mash some potatoes or blend partially for desired texture.
  • Stir in cream, butter, and cayenne. Heat for 15–20 minutes.
  • Serve hot with cheese and green onions on top.

Notes

- Add sausage, shrimp, or chicken for extra protein
- Substitute cream with coconut milk for dairy-free version
- Adjust spice level to taste
- Freeze before adding cream if storing long-term
