Ingredients
  

For the Meatballs

  • 1 lb Ground Turkey or ground chicken or beef
  • 1 tbsp Onion Powder freshly ground enhances flavor
  • 1 tbsp Garlic Powder use generously
  • to taste Salt
  • to taste Black Pepper

For the Chili Sauce

  • 1 tbsp Ground Cumin
  • 1 tbsp Chili Powder adjust for heat level
  • 1 can Diced Tomatoes consider using San Marzano
  • 1 cup Tomato Sauce

For Extra Goodness

  • 1 cup Mushrooms diced
  • 1 can Black Beans drained and rinsed
  • 1 cup Frozen Corn add directly frozen

Instructions
 

Preparation

  • In a large bowl, combine the ground turkey with 1 tablespoon each of garlic powder, onion powder, salt, and pepper. Mix gently, then shape into 20-24 walnut-sized meatballs.
  • While shaping meatballs, dice the yellow onion and slice the mushrooms.
  • In a separate bowl, mix the remaining garlic powder, onion powder, chili powder, and ground cumin.
  • Place the meatballs in the bottom of your slow cooker. Layer on the diced tomatoes and tomato sauce, followed by the onions, mushrooms, black beans, and frozen corn.
  • Sprinkle the prepared spice mixture over the entire layer of ingredients. Gently stir to combine.
  • Cover the slow cooker and set it to high for 2-3 hours or low for 3-4 hours.
  • Before serving, taste and adjust the seasoning if necessary.

Notes

Optional: Serve with fresh cilantro or a squeeze of lime for a zesty finish.
