Directions

  • Chop the vegetables: Begin by finely dicing the medium yellow onion, cutting the large carrots into thick slices, and chopping the celery ribs. Then, add these vibrant veggies to the slow cooker.
  • Layer the corned beef: Place the corned beef brisket on top of the vegetables. Generously season it with kosher salt and freshly ground black pepper, then sprinkle the store-bought pickling spice evenly over the brisket.
  • Add herbs: Toss the thyme sprigs and bay leaves onto the corned beef. Pour enough water into the slow cooker until the meat is almost submerged.
  • Set to cook: Close the lid and set the slow cooker to low for 7-8 hours or high for 4.5 hours, until the meat is fork-tender.
  • Incorporate the cabbage: About 45 minutes before serving, add the head of green cabbage, chopped into wedges, on top of the slow cooker.
  • Serve and enjoy: Once everything is ready, slice the corned beef and serve it alongside the colorful vegetables.
