How to Make Smoky BBQ Chicken

  • Pat dry the chicken thighs with paper towels.
  • In a mixing bowl, combine salt, garlic powder, smoked paprika, chili powder, onion powder, black pepper, and brown sugar.
  • Generously rub the spice mix all over the chicken thighs.
  • Let the seasoned chicken sit at room temperature for 10-15 minutes.
  • Preheat your grill to high on one side (about 400-450°F).
  • Place the chicken skin-side down on the cool side of the grill and cook for 30-35 minutes, flipping every 10 minutes.
  • When the internal temperature reaches 160-165°F, start brushing with BBQ sauce.
  • Continue cooking for 3-4 minutes after brushing with sauce, flipping to coat both sides.
  • Allow the chicken to rest for 5 minutes before serving.

Notes

Serve with a sprinkle of fresh parsley for extra color and flavor.
