Ingredients
- 1
15 oz can of salmon, drained and flaked
- 2 eggs
- ½ to ¾ cup breadcrumbs
- ½ cup finely chopped onion
- 2 tbsp green onions or parsley
optional
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- 1 tsp Cajun or Old Bay
optional
- ¼ cup flour
optional, for dusting
- 2–3 tbsp oil or butter for frying
Instructions
Drain salmon and flake into a bowl.
Beat eggs and add to salmon.
Add breadcrumbs, onion, herbs, garlic powder, salt, and pepper. Mix gently.
Shape into 6–8 patties. Dust with flour if desired.
Heat oil in skillet over medium heat.
Fry patties 3–4 mins per side until golden brown.
Drain on paper towels and serve hot.
Notes
- Chill mixture if patties feel soft
- Add diced bell pepper for extra color
- Use gluten-free breadcrumbs if needed
