Ingredients
  

  • - 1 15 oz can of salmon, drained and flaked
  • - 2 eggs
  • - ½ to ¾ cup breadcrumbs
  • - ½ cup finely chopped onion
  • - 2 tbsp green onions or parsley optional
  • - ½ tsp garlic powder
  • - ½ tsp salt
  • - ¼ tsp black pepper
  • - 1 tsp Cajun or Old Bay optional
  • - ¼ cup flour optional, for dusting
  • - 2–3 tbsp oil or butter for frying

Instructions
 

  • Drain salmon and flake into a bowl.
  • Beat eggs and add to salmon.
  • Add breadcrumbs, onion, herbs, garlic powder, salt, and pepper. Mix gently.
  • Shape into 6–8 patties. Dust with flour if desired.
  • Heat oil in skillet over medium heat.
  • Fry patties 3–4 mins per side until golden brown.
  • Drain on paper towels and serve hot.

Notes

- Chill mixture if patties feel soft
- Add diced bell pepper for extra color
- Use gluten-free breadcrumbs if needed
