  • 1/4 cup honey
  • 1/4 cup softened unsalted butter

  • Whisk together the cornmeal, flour, granulated sugar, baking powder, and salt in a mixing bowl until well combined.
  • Mix the buttermilk, eggs, and melted butter in another bowl until smooth and creamy.
  • Combine the wet and dry mixtures by pouring the wet mixture into the dry ingredients. Stir gently until just mixed.
  • Fold in the sweet corn kernels and shredded cheddar cheese.
  • Spoon the batter into the mini muffin tin, filling each cup about two-thirds full.
  • Bake for 12-15 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  • Prepare the honey butter by mixing softened unsalted butter with honey until you achieve a creamy consistency.
  • Cool the poppers slightly before drizzling them with the honey butter.
