Ingredients
  

For the Beef

  • 1 pound Ground Beef or ground turkey/chicken
  • 3 cloves Garlic (minced) fresh for best flavor
  • 1 tablespoon Soy Sauce low-sodium recommended
  • 1 teaspoon Chili Flakes adjust to taste
  • 1 tablespoon Brown Sugar can use honey or maple syrup
  • 1 tablespoon Sesame Oil or canola oil

For the Veggies

  • 2 cups Broccoli Florets or snap peas/spinach
  • 1 whole Red Bell Pepper any bell pepper is fine
  • 1 medium Zucchini or yellow squash
  • 1 cup Mushrooms (sliced) shiitake or cremini optional
  • 1 tablespoon Olive Oil any cooking oil can substitute

For the Base

  • 4 cups Steamed White Rice consider brown rice/cauliflower rice

Preparation

  • Start by washing and chopping your vegetables, mincing the garlic, and measuring out the sauces.

Cooking

  • Heat sesame oil in a large skillet over medium-high heat. Add minced garlic and sauté for about 30 seconds until fragrant, then add ground beef. Cook until browned, stirring occasionally. Stir in soy sauce, chili flakes, and brown sugar; let it simmer for 3-4 minutes until the sauce thickens.
  • In another pan, heat olive oil over medium heat. Sauté minced garlic for a brief moment before adding in the sliced mushrooms. Cook for about 2 minutes, then incorporate broccoli, red bell pepper, and zucchini. Cook until the veggies are tender-crisp, about 4-5 minutes.
  • Layer hot steamed rice at the bottom of each bowl. Top it generously with the spicy ground beef mixture and sautéed veggies.
  • Optional: Top with a fried egg or sprinkle with sesame seeds for added texture and richness.

Notes

For best results, use day-old rice and don’t overcook the vegetables to maintain their crunch.
