How to Make Nduja Soup

  • Begin by peeling and chopping the sweet potatoes, onion, and garlic into bite-sized pieces.
  • In a large pot, heat olive oil over medium heat. Add the chopped onions and garlic, stirring until they become translucent, about 3-4 minutes.
  • Add the sweet potatoes and nduja to the pot. Stir gently, cooking for about 5 minutes.
  • Pour in the vegetable broth, ensuring it covers the vegetables. Season with salt and pepper to taste.
  • Cover the pot and let the soup simmer for approximately 30 minutes or until the sweet potatoes are tender.
  • Using an immersion blender, purée the soup until it is smooth and creamy.
  • Adjust the seasoning if necessary, then ladle the warm soup into bowls.
