Ingredients

  • 8 oz Cream Cheese softened
  • 1 cup Confectioners' Sugar or powdered sugar
  • 1 tbsp Lemon Zest fresh

For the Cookie Dough

  • 1 cup Chopped Strawberries fresh or frozen
  • 1 tbsp Fresh Lemon Juice preferably fresh
  • 1 cup Granulated Sugar can substitute with brown sugar
  • 2 cups All-Purpose Flour
  • 2 tsp Baking Powder check freshness
  • 1/2 tsp Kosher Salt fine sea salt can be used
  • 1/2 cup Unsalted Butter softened
  • 1/2 cup Packed Light Brown Sugar or white sugar
  • 1 large Egg at room temperature
  • 1 tsp Vanilla Extract pure is preferable
  • 1/4 cup Sparkling Sugar optional

Preparation Steps

  • Prepare the Filling: Beat softened cream cheese with confectioners' sugar and lemon zest until smooth. Portion into 12 balls and freeze for 30 minutes to ensure they hold their shape.
  • Macerate Strawberries: In a bowl, mix chopped strawberries with fresh lemon juice and granulated sugar. Let them sit for 10 minutes to release their sweet juices.
  • Make Cookie Dough: In a mixing bowl, whisk together flour, baking powder, and salt. In another bowl, cream the softened butter, both sugars, egg, and vanilla extract until fluffy. Gradually add the flour mixture.
  • Combine Ingredients: Drain the macerated strawberries and gently fold them into the cookie dough until just combined.
  • Shape Cookies: Scoop the dough, flatten it slightly, and place a frozen cream cheese filling in the center. Cover with more dough and roll into a ball. Freeze for 30 minutes.
  • Bake: Preheat your oven to 350°F. Space the cookies on baking sheets and bake for about 18 minutes, or until lightly golden around the edges.
  • Optional: Dust the baked cookies with a light sprinkle of powdered sugar for a sweet finishing touch.
