Ingredients
  

  • - 28 oz crushed tomatoes
  • - ¼ cup sun-dried tomatoes chopped
  • - 1 garlic clove minced
  • - ¼ cup fresh basil or 4 tsp dried
  • - 1 cup full-fat coconut milk
  • - ½ cup water
  • - Salt and pepper to taste

Instructions
 

  • Blend all ingredients until smooth.
  • Transfer to a pot and bring to a gentle boil.
  • Simmer for 15–20 minutes over low heat.
  • Season with salt and pepper to taste.
  • Serve hot with your favorite sides.

- Use oil-packed or soaked dry sun-dried tomatoes.
