  • 2 cups Cucumbers English or Persian recommended
  • 1 teaspoon Salt For drawing out moisture
  • 2 tablespoons Scallions Chopped
  • 1/2 cup Onion Red or sweet onion, diced
  • 1/4 cup Cilantro Fresh, chopped
  • 1 each Chile Pepper Optional, sliced

For the Dressing

  • 1/4 cup Rice Wine Vinegar
  • 2 tablespoons Honey Adjust to taste
  • 1 teaspoon Ginger Fresh, grated
  • 1 clove Garlic Freshly minced
  • 1 tablespoon Sesame Oil

How to Make Tangy Honey Cucumber Salad

  • Thinly slice the cucumbers and place them in a colander. Sprinkle with salt and let them drain for about 30 minutes to 1 hour to remove excess moisture for a crisp salad.
  • Rinse the salted cucumbers thoroughly under cold water to remove excess salt, then pat them dry gently with a clean towel.
  • In a small bowl, whisk together the rice wine vinegar, honey, grated ginger, sesame oil, minced garlic, and any remaining salt. Let it sit for at least 15 minutes.
  • In a large bowl, mix the drained cucumbers with diced onion, chopped cilantro, sliced chile pepper, and scallions.
  • Drizzle the honey dressing over the cucumber mixture and toss gently to coat.
  • Garnish with sesame seeds and serve immediately.

Notes

For optimal freshness, combine salad just before serving. Prepare dressing and cucumber ahead of time.
