Preparation

  • In a bowl, combine honey, lime juice, lime zest, minced garlic, ground cumin, salt, and pepper. Mix well until smooth and fragrant.
  • Place the chicken breasts in a resealable bag, pour the marinade over, seal tightly, and let it rest in the fridge for 30 minutes to 2 hours.
  • Rinse jasmine rice under cold water, then cook it in chicken broth over medium heat for about 15 minutes until fluffy and tender.
  • While the rice cooks, heat your grill or grill pan to medium-high to get it nice and hot.
  • Remove chicken from the marinade and grill for 6-7 minutes per side or until fully cooked through, reaching an internal temperature of 165°F (75°C).
  • In a mixing bowl, carefully combine diced avocado, red onion, fresh cilantro, and olive oil until well mixed, but slightly chunky.
  • On a plate, layer a generous serving of the fluffy rice, top it with the grilled chicken, and spoon over the creamy avocado mix.
  • Garnish your beautiful dish with lime wedges to add a squeeze of brightness right before enjoying!
