Ingredients
  

  • - 2 lbs hot breakfast sausage
  • - 1 30–32 oz bag frozen tater tots
  • - 1 tsp salt
  • - ½ tsp black pepper
  • - ¼ tsp garlic powder
  • - ¼ tsp onion powder
  • - 1½ cups shredded cheddar cheese
  • - ½ cup shredded mozzarella cheese
  • - 8 large eggs
  • - 2 cups milk

Instructions
 

  • Preheat oven to 350°F. Lightly grease a 9×13-inch baking dish.
  • Cook sausage in a skillet until browned; drain fat.
  • Combine sausage, tater tots, and cheeses in a large bowl. Spread into dish.
  • Whisk eggs, milk, and seasonings. Pour over casserole.
  • Bake uncovered 60–70 minutes until eggs are set and top is golden.
  • Rest 5–10 minutes before serving.

Notes

- Prep the night before and bake in the morning
- Use spicy sausage or add veggies for a twist
- Freezes well baked or unbaked
