Ingredients
  

For the Chicken

  • 1 lb Boneless Chicken Thighs Trimmed and cut into 2-inch pieces

For the Sauce

  • 2 tbsp Olive Oil Or avocado oil
  • 1 cup Kalamata Olives Pitted
  • 1 cup Roasted Red Peppers Jarred or freshly roasted
  • 1 cup Chicken Broth Vegetable broth for vegetarian option
  • 3 cloves Garlic Mince finely
  • 1 medium Sweet Onion Diced

For Seasoning

  • 1 tsp Oregano Or Italian seasoning
  • 1 tsp Thyme Or parsley
  • 1 tsp Rosemary Or parsley
  • 1 leaf Bay Leaf Discard before serving
  • 1 tsp Red Pepper Flakes Adjust to taste

  • to taste Pepper

For the Finish

  • 1 whole Lemon Juice and zest for finishing

Directions

  • Trim the chicken thighs and cut them into 2-inch pieces; season generously with salt and pepper.
  • Dice the sweet onion, mince the garlic, zest the lemon, and slice the roasted red peppers.
  • Heat olive oil in a skillet over medium-high heat and brown the chicken pieces for 3-4 minutes on each side.
  • Remove the browned chicken and sauté the diced onion until translucent; add minced garlic.
  • Transfer the chicken back to the slow cooker along with onions, red peppers, olives, broth, and seasonings; mix gently.
  • Cover and set the slow cooker on low; cook for 4 hours.
  • Before serving, adjust seasoning and stir in lemon zest and juice.

Notes

Optional: Garnish with fresh parsley or serve with warm pita bread.
