For the Chicken

  • 2 tablespoons extra-virgin olive oil can substitute with neutral oil
  • 4 pieces boneless, skinless chicken breasts can be swapped with chicken thighs
  • 1 teaspoon kosher salt use table salt but reduce the amount
  • 1/2 teaspoon freshly ground black pepper

For the Sauce

  • 4 cloves garlic finely chopped
  • 1 tablespoon fresh thyme leaves can substitute with dried thyme
  • 1/4 teaspoon crushed red pepper flakes omit if no spice is desired
  • 1 cup low-sodium chicken broth can use vegetable broth
  • 1/2 cup finely chopped sun-dried tomatoes can replace with regular tomatoes
  • 1 cup heavy cream can use half-and-half
  • 1/2 cup finely grated Parmesan can substitute with Pecorino Romano
  • 1/4 cup torn fresh basil for garnishing, can substitute with parsley

Cooking Instructions

  • Heat extra-virgin olive oil in a large skillet over medium-high heat. Season the boneless, skinless chicken breasts with kosher salt and freshly ground black pepper. Sear until golden brown on both sides, about 4-5 minutes per side. Remove from skillet and set aside.
  • In the same skillet, add the finely chopped garlic and fresh thyme leaves. Sauté for about 1 minute until fragrant. Then, stir in the low-sodium chicken broth, finely chopped sun-dried tomatoes, heavy cream, and finely grated Parmesan. Let the sauce reduce and thicken slightly, stirring occasionally.
  • Return the seared chicken to the skillet, ensuring it is well coated with the creamy sauce. Transfer the skillet to a preheated oven and bake at 350°F for about 20 minutes, or until the chicken is cooked through and no longer pink in the center.
  • Carefully plate the chicken, spoon the rich sauce generously over the top, and garnish with torn fresh basil before serving.

Notes

For added enjoyment, serve with garlic bread or over a bed of pasta for a complete meal. Store leftovers in an airtight container for up to 3 days.
