For the Salad

  • 16 ounces elbow macaroni Cook al dente for the perfect bite.
  • 1 piece red bell pepper, diced Adds a pop of color and crunch.
  • 3/4 cup diced sweet pickles Brings tangy sweetness.
  • 4 stalks celery, chopped Provides refreshing crispness.

For the Dressing

Instructions
 

Cooking and Mixing

  • In a large pot, bring heavily salted water to a boil. Cook the elbow macaroni until al dente according to package instructions. Drain and rinse under cold water; drizzle with olive oil to prevent sticking. Let cool completely.
  • In a medium bowl, combine the mayonnaise, sour cream or Greek yogurt, sweet pickle juice, red wine vinegar, granulated sugar, and Dijon mustard. Whisk together until smooth.
  • In a large bowl, toss together the cooled macaroni, diced red bell pepper, sweet pickles, chopped celery, grated carrot, and red onion until well mixed.
  • If serving within 1-2 hours, pour all the dressing over the salad mixture. Stir until well coated, and allow to chill in the fridge for at least one hour for the best flavor.
  • If saving the salad for later, pour half of the dressing over the salad ingredients and gently toss. Cover and refrigerate the macaroni salad and remaining dressing separately. Stir in the rest of the dressing for freshness before serving.

Notes

Optional: Garnish with extra parsley or dill before serving for a vibrant touch. Store in an airtight container in the fridge for up to 3 days.
