How to Make The Ultimate Creamy Macaroni Salad

  • Boil elbow macaroni in heavily salted water according to package directions until al dente. Drain and rinse with cold water, then drizzle with olive oil to prevent sticking. Let it cool completely.
  • In a medium bowl, whisk together mayonnaise, sour cream (or Greek yogurt), sweet pickle juice, red wine vinegar, sugar, and Dijon mustard until smooth and well combined.
  • In a large bowl, combine the cooled macaroni with diced red bell pepper, sweet pickles, chopped celery, grated carrot, and finely diced red onion.
  • If serving within 1-2 hours, pour all the dressing over the salad, and stir until well combined. For best results, chill for at least one hour.
