Ingredients
  

  • **For the Squash:**
  • - 1 medium spaghetti squash
  • - 1 tbsp olive oil
  • - Salt and pepper to taste
  • **For the Meat Sauce:**
  • - 1 tbsp olive oil
  • - 1 lb ground turkey
  • - 1 small onion diced
  • - 3 cloves garlic minced
  • - 1 14.5 oz can crushed tomatoes
  • - 2 tbsp tomato paste
  • - 1 tsp oregano
  • - ½ tsp basil
  • - ½ tsp red pepper flakes optional
  • - Salt and pepper to taste
  • - Fresh herbs for garnish
  • - Optional: Parmesan cheese

Instructions
 

  • Preheat oven to 400°F. Halve squash, remove seeds, drizzle with oil, season, and roast cut side down for 35–40 mins.
  • In a skillet, heat oil and sauté onion until translucent. Add garlic and cook 1 min.
  • Add turkey and cook until browned.
  • Stir in tomatoes, paste, and seasonings. Simmer 10–15 mins.
  • Shred squash with fork and serve in bowls.
  • Top with turkey sauce and garnish.

- Add greens like spinach or kale for extra nutrition
- Use marinara if short on time
- Store leftovers separately and reheat gently
