Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x13-inch baking dish with non-stick spray or butter.
  • Peel and cut the potatoes into ½-inch cubes; finely dice the onion.
  • Cook the thick-cut bacon in a skillet until crispy, then crumble it.

Mixing

  • In a large bowl, combine the cream of chicken soup, cream of potato soup, sour cream, milk, poultry seasoning, garlic powder, and black pepper. Stir until smooth.
  • Stir in 1 cup of cheddar cheese.
  • Gently fold in the potatoes, shredded chicken, mixed vegetables, crumbled bacon, and diced onion.

Baking

  • Pour the mixture into the prepared baking dish, cover tightly with aluminum foil.
  • Bake for 60-75 minutes until the potatoes are fork-tender.
  • Remove from the oven, uncover, and sprinkle with remaining cheddar, mozzarella cheese, and fried onions.
  • Bake uncovered for an additional 8-10 minutes until the cheese is melted and the onions are golden.
