Ingredients
  

  • - 2 tbsp olive oil
  • - 1 large onion diced
  • - 4 cloves garlic minced
  • - 2 lbs ground beef
  • - 1 red bell pepper chopped
  • - 1 green bell pepper chopped
  • - 2 15 oz cans diced tomatoes
  • - 1 15 oz can tomato sauce
  • - 2 15 oz cans kidney beans, rinsed
  • - 1 15 oz can black beans, rinsed
  • - 3 tbsp chili powder
  • - 1 tbsp cumin
  • - 1 tsp smoked paprika
  • - ½ tsp cayenne pepper optional
  • - Salt & pepper to taste
  • - ½ cup beef broth or water

Instructions
 

  • Heat oil in pot. Sauté onion & peppers 5 mins. Add garlic, cook 1 min.
  • Add beef. Cook until browned. Drain fat.
  • Stir in spices. Toast 1 min.
  • Add tomatoes, sauce, beans, broth. Simmer 30–40 mins uncovered.
  • Taste, adjust seasoning, and serve with toppings.

Notes

- Use turkey or lentils to lighten
- Add dark chocolate or coffee for deeper flavor
- Top with cheese, sour cream, chips, or jalapeños
