Ingredients
  

For the Soup

  • 2 tablespoons Cooking Oil can substitute with canola or vegetable oil
  • 1.5 pounds Beef Stew Meat preferably chuck or round cuts
  • 1 teaspoon Sugar can be omitted if desired
  • 2 tablespoons Flour replace with gluten-free flour for gluten-free option
  • 1 cup Dry White Wine substitute with additional beef stock
  • 4 tablespoons Unsalted Butter swap with olive oil for dairy-free option
  • 1 teaspoon Black Pepper freshly ground preferred
  • 4 cloves Garlic use minced for best results
  • 4 large Yellow Onions key for flavor
  • 2 tablespoons Worcestershire Sauce vegan alternative: soy sauce and vinegar mix
  • 1 teaspoon Salt adjust to taste
  • 1 leaf Bay Leaf substitute with thyme if desired
  • 4 cups Beef Stock preferably homemade or low-sodium

For the Topping

  • 1 loaf French Baguette substitute with any crusty bread
  • 2 cups Gruyere Cheese can substitute with Emmental or other good melting cheeses

Steps

  • Heat oil in a large pot over medium-high heat. Brown the beef stew meat in batches, seasoning with salt and pepper for about 3-4 minutes per side. Remove and set aside.
  • Deglaze the pot with 1 cup of beef stock, scraping up the browned bits from the bottom. Pour this over the reserved beef.
  • Reduce heat and melt the butter in the pot. Add sliced onions and sprinkle with sugar, caramelizing for 30-40 minutes.
  • Stir in minced garlic and cook for about 2 minutes. Then sprinkle in the flour, cooking for another 1-2 minutes.
  • Add reserved beef, remaining beef stock, dry white wine, Worcestershire sauce, bay leaf, and black pepper. Stir and bring to a gentle simmer.
  • Cover the pot and let it simmer on low for about 2 hours.
  • Ladle the soup into oven-safe bowls. Top each with a slice of toasted baguette and a generous amount of shredded Gruyere cheese.
  • Broil the bowls until the cheese is melted and golden, about 2-3 minutes.

Notes

Optional: Garnish with fresh thyme for extra flavor. Store leftovers in an airtight container for up to 4 days.
