  • Begin by cutting the Yukon Gold potatoes into 1/2-inch cubes. Place them in a pot, fill with cold water, and add a generous amount of kosher salt. Bring to a boil and cook for about 15 minutes until tender but firm.
  • While the potatoes are boiling, hard-boil your eggs by placing them in a pot of water. Once boiling, let them simmer for about 10-12 minutes, then cool and chop.
  • In a large mixing bowl, combine the cubed potatoes, chopped eggs, red onion, dill pickles, mayonnaise, Dijon mustard, lemon juice, paprika, and chives. Mix well and season to your taste.
