For the Sauce

  • 1/2 cup Tamari Substitute with low sodium soy sauce if desired.
  • 1/4 cup Brown Sugar Use coconut sugar for a lower sugar alternative.
  • 1 tablespoon Fresh Ginger Powdered ginger can be used in pinch—just use sparingly.
  • 2 cloves Garlic Use minced garlic or substitute with garlic powder (1/4 teaspoon per clove).
  • 2 tablespoons Honey Replace with agave nectar for a vegan option.
  • 1 tablespoon Sesame Oil Consider adding chili oil for a hint of heat.
  • 1/4 cup Mirin Sherry with a pinch of sugar can be used if mirin is unavailable.
  • 1/4 cup Water Combine with cornstarch for thickness.
  • 1 tablespoon Cornstarch Omit for a marinade use.

  • In a small saucepan, add all the ingredients—tamari, brown sugar, ginger, garlic, honey, sesame oil, mirin, water, and cornstarch. Stir well to ensure everything is mixed evenly.
  • Place the saucepan over medium heat and bring the mixture to a gentle boil. Stir constantly to prevent sticking and ensure the sugar dissolves completely.
  • Once boiling, reduce the heat to low and let it simmer for about 4 minutes, stirring occasionally until the sauce thickens and becomes glossy.
  • After simmering, remove the saucepan from heat and allow the sauce to cool at room temperature.
  • Once cooled, transfer the sauce to an airtight container and store it in the refrigerator.

Notes

For best flavor, use fresh ginger and garlic. Store in an airtight container and enjoy within a week.
